Spicy Salami Tortelli with Red Pepper Pesto & Chargrilled Tenderstem Broccoli
The perfect pasta dish for those who love a little spice.
I love this meal, especially after work when you’re just looking for something quick and delicious! It has a little kick to it, but this is softened with the sweetness from our Red Pepper Pesto. Adding in some of your favourite veggies really does make this a wholesome midweek meal.
Bring a pan of salted water to the boil and then add the broccoli and cook for a minute then remove.
Heat a griddle pan and the add the garlic oil then char and cook the broccoli till lightly coloured remove and leave to one side.
Now cook the pasta in the broccoli water for 2 minutes then drain.
Toss the pasta in a bowl with the pesto and then place into two bowls.
Garnish with the broccoli and grated parmesan if you wish.
