Pumpkin Gnocchi with Creamy Mushroom, Spinach & Pine Nuts
A fulfilling dinner made in minutes. So simple and so tasty, with mushrooms, spinach and roasted pine nuts.
This is Autumn in a bowl. Healthy and quick to cook and will have you feeling warm and fulfilled in no time, especially great for those cold and rainy Autumnal days.
1 pack Dell'Ugo Fresh Pumpkin Gnocchi (Buy now)
1 white onion – peeled and finely chopped
Handful porcini mushrooms
Handful chestnut mushrooms
Handful button mushrooms
1 pack baby spinach
Handful pine nuts - roasted
Place a frying pan on a medium heat, add a little olive oil and then the onions and lightly fry until softened.
Then add the mushrooms and fry for 1-2 minutes.
Add the spinach and cook through for 1 minute.
Place the contents of the frying pan in a food processor and blitz until smooth.
Meanwhile, cook the pumpkin gnocchi according to packet instructions before draining.
Stir the mushrooms with the pumpkin gnocchi.
Place the gnocchi on a plate, sprinkle the pine nuts over the top.
